Litti Chokha is a very famous Bihar dish .
Steps to make Litti chokha
Step 1: Make a dough of wheat flour ( atta )
- 1/2 cup of wheat flour ( atta )
- 1/4 tsp carom seed ( ajwain )
- 1/4 tsp baking powder
- 1/2 tsp salt
- 2 tsp ghee
Step 2 : Make stuffing for litti
- 1 cup sattu
- 2 tsp chopped coriander
- finely chopped Chilies according to taste
- 1/2 tsp ginger garlic paste
- 1/2 tsp cumin / jeera
- 1/2 tsp kalonji
- 1 tsp ajwain
- 1/4 tsp salt
- 1 tsp lemon juice
- 2 tsp mustard oil
Step 3 : Make chokha
- 2 tomatoes
- 2 brinjals
- chopped chillies
- 2 chopped garlic
- 1 inch chopped ginger
- 2 finely chopped onion
- 2 tsp coriander powder
- 1 tsp lemon juice
- 2 tsp mustard oil
- 1/4 tsp salt
Instructions to make litti chokha
- Firstly make soft dough of wheat flour .
- For stuffing , combine sattu , chopped onions , chopped ginger , chopped garlic , chopped green chilies , chopped coriander , ajwain , kalonji , mustard oil , amchur powder , lemon juice and salt . Blend all these ingredients together .
- Now make small – small balls of dough and fill the full spoon of stuffing in the center of the dough ball and seal the edges of the dough ball making it into smooth balls .
- Now cook the littis in a cooker . Heat pressure cooker ( remove the whistle ) and grease inside with oil . Place the littis in the cooker and cook on medium to low flame for 20 – 30 minutes .
- To make chokha , insert garlic into Brinjal . Roast the brinjal , green chillies and tomatoes directly on an open flame until the skins start peeling off . Now peel their skin and mash the peeled vegetables together until they are well combined . Add the chopped onion , salt , mustard oil , chopped ginger and garlic to the mashed mixture . Now chokha is ready .

- Balance spices according to your taste .
- Rest the dough for 10 minutes at least .
- Cook evenly .
- Serve hot .
