Poha is a very healthy dish to have at breakfast . It is a Maharashtrian dish which can be made in different ways but today I will tell you the most famous kanda Poha recipe .

Ingredients to make kanda poha
- 2 cup poha ( flattered rice )
- finely chopped 1 onion
- 2 – 3 green chilies ( according to your taste )
- finely chopped coriander
- 2 tsp peanuts
- 1 tsp cumin seed ( jeera )
- few curry leaves
- finely chopped 1 inch ginger
- half tsp lemon juice
- 1/4 tsp turmeric
- salt ( according to taste )
Instructions to make kanda poha
- Wash the poha in running water a few times until it softens , and then strain out all the water .Do not soak the poha in water otherwise it will turn soggy .
- keep the poha aside for about 10-15 minutes in a covered bowl , so that it does not dry out .
- Now in a pan , heat up a little oil and roast the peanuts for 2 – 3 minutes . Once the peanuts starts developing a good color , get them out of the oil , and set aside .
- Then in the same pan , first add cumin seeds ( jeera ) and then the mustard seed ( sarso ) . Once the mustard seeds start crackling , add the curry leaves , chopped chilies .
- Now add the chopped onions and saute them well till the onions develop a golden brown color .
- Once the onions are done , add in a little salt , turmeric ( haldi ) powder and the poha that was set aside earlier . Mix everything well .
- At last add roasted peanuts , coriander leaves and lemon juice . Then cook it on low flame for 2 – 3 minutes , so that poha can absorb the flavorings .
- Now serve hot .
